A Happy Holidays to everyone! Today is Christmas Eve and we will be celebrating by spending time with family, baking in the kitchen all day and eating every soup we can think to make {my dad loves to make oyster stew and tries to convince us every year that it’s yummy.} I thought I’d share a favorite treat with you to enjoy this holiday season. It’s really easy, and they taste like you spend all day perfecting them.
OREO TRUFFLES
Ingredients:
White almond bark
1-2 teaspoons of Crisco (solid vegetable shortening) as needed to make almond bark smooth
1- 8 oz pkg cream cheese, softened
1 pkg Oreo cookies, grind fine in food processor
Chocolate chips/baking bark (for drizzle)
Directions:
Melt white almond bark in double boiler. Add Crisco, 1/2 teaspoon at a time to make mixture smooth (do not add liquid oil or water as it will clump). In another bowl, mix Oreos with cream cheese. Use mall scoop to make small balls. Place in freezer for 15 minutes. Dip in melted almond bark & place on wax paper.
For drizzle: Melt chocolate chips & drizzle over white Oreo truffles with frosting bag/spoon.
Variation: Use mint Oreos & dip in white chocolate/almond bare. The are more difficult because they are double stuffed (hard to form). Add 1 drop green food coloring to white chocolate/almond bark.

Remember those wonderful egg rolls I taught you how to make last week? Well, here is the entree to go with them. It’s called twice cooked pork. You boil the pork and then also cook it in the skillet. Hence the twice cooked name.

Here are the ingredients you’ll need:
- Pork- boil it before hand
- Leeks- cut in about 3/4″ squares and soak in water to clean
- soy sauce
- garlic powder
- white pepper
- sweet bean sauce
- chili garlic sauce

Aren’t leeks so pretty? Here they are stilling out to dry and are all ready to be cooked.
Now let’s getting cooking. Here we go step by step:

We added the chili garlic sauce at the table so it was kid friendly and everyone could choose their level of spiciness. This meal was ready in no time and was so delicious.
It would be perfect for those that don’t have a lot of time to cook. Boil the pork ahead of time and place in the refrigerator so it’s there ready to go when you’re ready.

Look at this scrumptious meal! It was to die for!

Start by chopping the head of cabbage, carrot and black mushroom. Once you have everything chopped, put a little vegetable oil in your wok, sprinkle a little garlic powder and white pepper in. Stir and mix for about 7-8 minutes.

It should look something like this. Not too crispy, but not too soggy either.
Let your cabbage/carrot/mushroom mix set for a little bit. If it’s too warm, it will break the egg roll wraps as you roll them.
About 5 minutes and you should be good to go. And here’s how you wrap them.

And before you know it, you have a pretty little tray of them like this.

Now they are ready to be cooked. Pour some vegetable oil in a pan (about 2 1/2″ worth) on medium heat. Let it heat up a bit and drop them in- a few at a time.
Watch them get brown.

Fun, huh? When they look a golden brown, they are ready to be pulled out of the pan. And now they’re good enough to eat.
At least after they get a little time cooling off.

And let me tell you, they are delicious! We served them with twice cooked pork and it was to die for. Want me to share that recipe with you too? It’s easy and just as yummy as these egg rolls.
